An irresistible summer treat - a mango bread with a honey-lime glaze.
Ingredients
0.5 cup salted butter (melted)
0.75 cup sugar
2 eggs
0.5 cup buttermilk
1 teaspoon vanilla extract
1.75 cups AP flour
0.5 teaspoon salt
0.5 teaspoon baking powder
0.15 (one eighth) teaspoon baking soda
2 large mangoes, chopped
3-4 tablespoons of Hawaiian honey
Zest and juice of one lime
Instructions
Preheat oven to 350F and lightly oil a standard loaf pan.
In a large mixing bowl, combine all of the liquid ingredients.
Slowly add in the flour, but don't overmix. Fold in the rest of the dry ingredients and, lastly, the chopped mangoes.
Pour batter into the pan and even out the top with a spatula, if necessary.
Bake for 45 minutes to 1 hour, until a toothpick inserted into the middle of the loaf comes out clean and dry.
Cool the bread. To make the glaze, combine honey, lime juice and lime zest in a microwave safe bowl. Heat in the microwave for 20 seconds and pour over the mango bread.
Combine and microwave for 20 seconds then pour over the bread.
