The perfect comfort food, a diet cheat, an extra treat – whatever you call it, grilled cheese is IT.
I am sure you all agree.
This spring version combines some of my favorite things to pair with another one of my favorite things – Cowgirl Creamery cheese. These include: more cheese (hard and zesty cheese, this time), fuji apples, and kale chips.
Tip: If you’re making your own kale chips, you can search on the sidebar for a simple recipe!
Red Hawk and apple crisp grilled cheese
You’ll need:
- two slices nutty and crusty bread
- two slices Red Hawk Cowgirl Creamery Cheese
- two slices pepperjack cheese
- about 4-6 thin slices of fuji apple
- a handful of kale chips
- 1 T of butter
1. Layer Red Hawk Cheese with slices of pepperjack, apple and some kale chips on top of each slice of bread. Sandwich together.
2. Heat up your skillet and add half of the butter.
3. Grill one side of the bread until crusty and golden brown. The cheese should be starting to melt nicely.
4. Add remaining butter and flip. You can lightly press the sandwich down at this point too.
I like to serve it with more kale and apple chips to pretend like this is a healthy snack…!

Sounds delicious, grilled cheese and apple. I live in a country overflowing with good cheese and have to say that I’ve never heard of Red Hawk Cowgirl Creamery cheese. It’s name sounds very processed, but I’m guessing that you know more about this cheese than I do. Your post has made me think that a grilled cheese sandwich, or croque monsieur, might be a good lunch on this sunny spring day:)

Hi Roger! Luckily, Cowgirl Creamery (based in California) is a wonderful operation and one of the only ones in the US making raw milk and washed rind cheeses. The Red Hawk is one of their most “basic” cheeses and it’s washed rind and triple cream, which you can imagine, melts quite deliciously!

Oh my, this is absolutely gorgeous! I agree with Alice that apple and cheese are a match made in heaven, so I love the idea of adding the healthy kale chips and nutty bread. SO GOOD! Want!

Thanks so much!! I tried to balance it out somewhat 🙂 – though it’s still mostly cheese (yum) – but, of course, it’s the added crunch that’s really great.
