Strawberry and watermelon salad with orange blossom syrup

Simple and delicious, this salad makes the most of summer’s favorite fruit, with a little extra (orange blossom!) to punch up the flavor.

On a hot day like today, this fruit salad – and a sprinkler – will be your best friend.

You’ll need:

  • 4 cups watermelon, diced
  • 2 cups strawberries, sliced
  • 1/2 cup water
  • 1/2 cup raw sugar
  • 2 T orange blossom water (you can also use rose water – sparingly!)
  • 1 t vanilla extract or 1/2 vanilla bean

1. Make the syrup first – in a small saucepan, combine sugar and water, add vanilla or vanilla bean. Bring to boil, stirring often then remove from heat and cool and strain. Add the orange blossom water to the cooled syrup.

2. Toss the watermelon and strawberries with about half of the syrup. Leave to ‘infuse’ for a bit.

3. Before serving, drizzle with remaining syrup. Garnish with some freshly chopped mint, if desired.

  1. Yum! What a refreshing summer salad! And I love the orange blossom syrup, but I’m nuts about rose water. What a lovely idea. I’m posting this to my facebook page, my readers will love this!
