I believe that weekend breakfasts should be both decadent and easy. You want to eat something delicious that you may not necessarily treat yourself to over the course of the week.
When I read about this trick in Bon Appetit, it sounded too good to be true – but I’ve tested it a few times and it works!
So here is your easy Sunday breakfast: sandwich thins/english muffin/bagel with poached eggs.
You’ll need:
- 1 cup water
- 1 tsp white vinegar
- salt
- pepper
- eggs
- bread for toasting
1. Pour 1 cup water into a small deep bowl, add a pinch of salt and a tsp of vinegar.
2. Break an egg cleanly into the water. Cover with a saucer or small plate. Put bread in toaster.
3. Cook in the microwave on high, covered, for JUST 1 minute, no more.* Lift your perfectly poached egg out with a slotted spoon onto bread (or muffin or bagel etc). Add a little bit of salt and pepper.
And voila! So good.
*I’ve noticed that in newer, powerful microwaves 1 minute is just enough, but if your microwave is older it may take closer to 1.5-2 minutes.

I’m going to try my hand at this because I’ve never poached an egg before. Plus, I know that this week’s ffwD has us doing something similar, so I need to get some experience under my belt! Thanks for sharing this technique!
