I saw these Rosetta apples at the market and couldn’t resist. They are the most beautiful apples I have ever seen and their sweet-tart flavor makes them extra appealing.
I would love to try baking with them but, for now, I wanted to enjoy them in “pure” form, shaved with sweet yellow carrots and a tangy yogurt and honey dressing.
Tips: Of course, you can substitute any kind of apple or carrot that you like – just remember to have both be crisp, yet contrasting in terms of sweetness and tartness.
Yellow carrot and pink apple slaw
You’ll need:
- 1 rosetta apple
- 3 yellow carrots
- 2 heaping t greek yogurt
- 2 t mirin (Japanese seasoning/condiment, similar to rice wine or vinegar)
- 1/3 t honey
- fleur de sel salt
1. Slice or shave the apples and carrots thinly. {The skin of the rosettas is fairly thin and the carrots were young ones, but depending on the variety that you end up using, peel them, if need be.} Toss together in a bowl.
2. Whisk together greek yogurt, mirin, and honey.
3. Season the apples and carrots lightly with salt. Dress the slaw with the yogurt dressing and refrigerate for 30-40 minutes before serving.

What an amazing apple! I’ve never heard of a rosetta, but now I’m convinced that I need to find one. Gorgeous rosy flesh… you used them perfectly in this simple, crispy salad. Yum!

I’m yet to see such a delicious variety of apples as these! The Rosetta might be a northern hemisphere thing, the only thing that comes close (to my mind) is that light green tinge of a beautiful Granny Smith. No doubt these apples are a beautiful pairing with your carrots and that mirin dressing.
