This dessert is a result of two things:
1) one of my favorite childhood snacks has always been slices of cheese with an apple
2) you must know by now that savory and sweet desserts are something that I love.
In fact, it does not have to a dessert at all! It can be a fun starter or accompaniment to a salad at a dinner party.
So excited for apple season!
Tips: Score the apples all around lightly with your pairing knife to prevent them from bursting in the oven.
Baked apples with cheese and honey
You’ll need:
- 4 golden delicious apples
- 2 oz hard cheese – I used a hard, aged Spanish mahon (you can substitute cheddar or manchego)
- 1/3 t ground cinnamon
- light amber honey
- balsamic glaze
- salt (mild fleur de sel is best)
1. Preheat oven to 380F. Line a roasting pan with foil. Score the apples as described above. Core them deeply and carefully, preserving the tops and stems (see below).
2. Dice the cheese into cubes. Fill the apple cores with cheese about half-way. Top each apple with cinnamon, a tiny bit of salt, and a good drizzle of honey , and a few drops of balsamic glaze to “seal off” the filling. Then, top with the reserved apple top/stem.
3. Bake for 35-40 minutes. The apples should be soft but not “deflated,” the filling bubbly and syrupy.
4. Serve warm, warm, warm! And gooey.
This looks amazing, and speaking as someone who shares your appreciation for apples and cheddar, sounds irresistible. I’ll be trying this the first chance I get!
