The smells of autumn: damp leaves, crisp air, and baked apples. Or you could put baked apples first in that list, I am sure no one will mind.
For this recipe you need a crisp, hard, and sweet variety – a Crispin, Mutsu, or Golden Delicious will work well.
For each apple, you’ll need:
- 1 tsp honey
- 1 cube of brown sugar
- 1 stalk of rosemary
- 1/2 tsp lemon zest
- 1/3 tsp cinnamon
1. Core the apples and score each apple all around lightly with a knife.
2. Drizzle honey along the inner rim of the apple core, add sugar, zest, cinnamon, and rosemary.
3. Bake at 380F for about 45 to an hour, you want them gooey and almost mousse-like inside.
Equally delicious hot or cold.

Baked apples always remind me of my childhood – my grandma used to make theme whenever me and my sister spent out holidays in her house. Thanks for bringing back those nice memories 🙂
