I love farmers cheese (tvorog, in Russian) though it can sometimes be hard to find here.
It is a nostalgic taste for me, and it is so great when it is baked with fresh berries, in summer, or jam in winter, making for a wholesome dessert.
The Lifeway brand is the closest that I have found matching it in texture.
Tips: This dessert will rise while baking, like a soufflé, but will deflate quite a bit as it cools and, especially, after refrigeration – still very tasty! And it’s great for breakfast too.
Also, you can make this in a 6 inch springform, but I think it looks particularly sweet when served individually and baked in little 3 inch bundt tins.
Farmers cheese and berry “soufflé”
(Makes 4 individual servings or one large cake)
You’ll need:
– 2 eggs
– 1/3 cup raw sugar
-1/3 cup cornstarch
-1 packet vanilla sugar
– zest of 1/2 lemon
– 1 t lemon juice
– 200 g (about half a pack) of farmers cheese
– 4 T berry jam (I used blackberry)
– oil, for cake pan(s)
1. Preheat oven to 355F.
In a large bowl, beat the eggs and sugar with a hand or stand mixer until the mixture is light and a bit frothy, about 5 minutes.
2. On low speed, add in the lemon zest and lemon juice. Turn off mixer.
3. Crumble the farmers cheese with a fork. Using a spatula, gently fold in the farmers cheese into the egg and sugar mixture. Do the same with the cornstarch.
4. Butter or oil whichever pan you are using. Sprinkle pan(s) with vanilla sugar. You’ll get some nice caramelization on the sides.
5. Divide the mixture evenly among the four pans. Top each with a few dollops of jam. The jam will sink a bit into the “soufflés” as they bake, soaking it through with berry flavor.
Bake for 40-45 minutes until golden brown and “puffed” up. Serve warm or cold, later.

This looks nice! Tvorog, or probably more similar to the German version ‘quark’ is very common here, but I have not had many recipes to use it for. This recipe looks like it needs to be tried out using quark, very tempting 🙂
