The constant question: how to balance a quick, delicious, and nutritious meal on busy week nights?
I often turn to roasting some wild fish fillets for a simple supper.
Flounder – as well as other mild white fish – is easy to flavor and quick to cook en papillote (parchment).
Add some punched up artichoke hearts, and you have a really memorable meal.

Simple suppers: roasted flounder with spicy artichokes
You’ll need:
– 2 medium wild flounder fillets
– 6 oz steamed artichoke hearts
– spice mix (about 1/2 T each: red pepper flakes, dried thyme, sea salt, pepper, garlic salt)
– 1 T olive oil
– 3 garlic cloves
– 1 T lemon juice (or white wine vinegar)
– 1/4 cup vegetable juice (V8 or similar)
1. Steam artichokes first (you can also use frozen artichoke hearts, completely defrosted).
Preheat oven to 350F.
2. Toss artichoke hearts with half of the spice mix, olive oil, lemon and vegetable juice.
3. Season the fish fillets with the remaining spices, top with artichokes, and wrap loosely in a large parchment or foil packet.

I love being reminded of techniques I don’t use enough. Roasting en Papillote is one of them! I may break out my preserved lemons and salmon and get experimental tonight.

I cook flounder al the time, it is one of my favorite fish. I hadn’t thought to mix spicy flavors with the mild fish…can’t wait to try it.
