Happy Bastille Day from France!
I love holiday weekends, no matter how busy they tend to get.
For a family get-together and barbecue on the roof, I made this refreshing watermelon salad full of sweet and savory flavors. The honey-thyme dressing ties everything together in this light and summery dish, with a subtle Provençal nod.
Tips: If you can’t find tomme chèvre cheese (a salted hard goat cheese variety), use a mild ricotta salata instead.

Watermelon, tomme, and mint salad
You’ll need:
-1/2 of a medium-sized seedless watermelon
– about 70 g of hard tomme chèvre cheese (this will yield approximately half a cup when cut)
– 1 cup mint, picked
– 2 sprigs lemon thyme
– 2 t lavender honey
– pinch of salt
1. Cut the watermelon into cubes. Shave the cheese fairly thinly.
2. In a regular-sized coffee cup, combine 2 teaspoons of honey with thyme sprigs and a cup full of hot water. Leave to infuse for about 30 minutes, until cool.
3. Roll the mint leaves together and cut into a chiffonade. Combine watermelon, cheese, and mint and toss lightly.
4. Dress the salad with the honey-thyme infusion. Add a pinch of salt, and refrigerate until ready to serve.
