So I found some broken speculoos cookies (still in their distinctive wrappers!) on the bottom of my bag the other day.
I decided to mix them with nuts and chocolate and make these easy brownies that are sure to brighten up any gloomy weather day.
These brownies have an almost biscuit-like, airy texture and are chock-full of tasty.
You’ll need:
- 100 g butter (a little less than a stick)
- 2/3 cups bittersweet chocolate (chips or chopped)
- 1/3 cup sugar
- 1/5 cup whole wheat flour
- 3 eggs
- heaping 1/3 cup chopped walnuts
- heaping 1/3 cup chopped (or crumpled) cookies – any kind you like! but I like something spicy or almondy
1. Preheat oven to 350F. Butter your favorite square baking dish or pan. In a bain marie, melt butter and chocolate on low heat and stir with a spatula until thick, glossy, and smooth.
2. Mix in the nuts and cookies into the chocolate mixture.
3. Sift together the dry ingredients, add eggs, and whisk together gently.
4. Fold in the chocolate mixture into the batter. Pour and spread evenly into the baking dish.
5. Bake for approximately 25 minutes, when a toothpick inserted into the middle of the cake comes out clean and the cake is coming away slightly from the sides (it will deflate a bit as it cools).

Everywhere I look today there is some choco-loving going on! I love this, wish I knew what a Speculoo tasted like cause they look like crunchy moreish yumminess inside your brownies! 🙂

Hmmm how do I describe them? They don’t have any butter in them, yet are crunchy and crumbly ginger spice cookies!
