I got really excited about this apple quince jelly!
I’ve never actually worked with apple quinces before now and they are an exciting new fruit, quite a bit sweeter than regular quinces but with the same tart, distinctive sharpness and fragrance. I can’t describe exactly how good these smelled while cooking.
All you need is apple quinces and sugar. In a proportion of 2:1, i.e. 1/2 amount of sugar per the amount of pureed fruit.
1. Core and chop the apple quince(s) and place in a pot. Fill with water so that the fruit is just covered.
2. Cook uncovered for 30-40minutes until the skins come away from the fruit and it has softened.
3. Push the cooked fruit through a sieve or puree it in a small food processor.
4. Put the puree back in the pot and add the necessary amount of sugar.
5. Keep stirring constantly and cook until the puree is thickened.
6. I used an oiled silicone mold to set the jelly.
Perfect with cheese, bread, or yogurt.
