Here is another tasty way to enjoy avocado – on your pizza!
If you have a pizza stone, that is the best thing to use. Otherwise, just bake directly on the rack in your oven.
You’ll need:
- whole wheat pizza dough
- 1 ripe Haas avocado
- 2 campari tomatoes
- one round of goat cheese crottin
- 2 tsps olive oil
- 1 tsp lemon juice
- salt & pepper
1. Preheat oven to 450F (when you start baking, lower to 425F) and roll out your dough.
2. In a small bowl, combine the scooped out avocado with the lemon juice and olive oil. Mash and mix well, season to taste.
3. Slice the tomatoes and crottin in fairly thin rounds.
4. Spread the avocado mixture, as if it were sauce, on the pizza dough, then top with goat cheese and tomatoes. Sprinkle a little more salt and pepper on top if you like.
5. Bake until the crust is crispy and the cheese melted (at 425F), about 15 minutes.
Rustic, gooey, and delicious.

Oh, great idea to put goat cheese on pizza. I’ve been on a kick of using sheep cheese for pizza and goat cheese in appetizers, but maybe a goat cheese appetizer pizza? I have to admit that I’m not seeing the avocados, though, but I don’t really like them much. Olive paste, on the other hand…
Either way, a great excuse to make (sadly, gluten-free) pizza crusts this weekend.

I think it would be very tasty with olive tapenade! Or I’ve also made it before with a base of caramelized onions.
