Who is ready for a picnic this weekend? The weather is perfect for lounging in the park with a good book, great company, and delicious food.
Pack these sandwiches to come with you on an early summer adventure.
You will need:
- 2 pieces of sourdough bread (or a nutty pecan bread is great here too), toasted
- 1/2 a large, ripe Haas avocado
- 2 Roma tomatoes
- 1/2 tsp fleur de sel
1. The only trick here is in slow roasting the tomatoes, which really brings out their intense, sweet flavor. Preheat oven to 300F. Cut tomatoes in half, sprinkle with salt, and place on a foil-lined baking sheet. Roast for about 2-2.5hrs.
2. When the tomatoes are ready, they will look almost sundried. Scoop the avocado onto the bread. Roughly chop the tomatoes and layer on top. Add another sprinkle of salt on each slice.
