This is one of my favorite French ‘composed’ salads.
Why? Because it has all the things everyone likes: poached egg (in my case, using this easy method); bacon from Berkshire pigs (lower in sodium!) and, conveniently, the tastiest; and fresh, local asparagus from Long Island.
I substituted apple pulp balsamic vinegar for the sherry vinegar because I am simply loving it at the moment and, really, putting it on everything I can.

I ran across it by chance at a store – they had pear pulp too, which sounds more unusual, so I am looking forward to trying that one sometime too.

Berkshire pigs- apple pulp balsamic ? YES PLEASE !! Wow that sounds great. I feel like going gourmet shopping now…Nana loved this one but she is a fan of similar salads. I can’t swing runny yokes (chicken, I know 🙂 and will visit this one over next weekend when my whole family is home to test it. Which gives me time to find that balsamic…..

You know that I am a fan of runny yolks, but I’ve seen that many people are not – totally understandable. But I’m sure that once you make the salad, you’ll see that there are so many great flavors in there already, it will work well anyway! Enjoy:) and I hope you find that vinegar!
