Who is with me? I love artichokes but I hate working with them – the washing, peeling, icing etc. routine takes forever and then you’re left with just a few artichoke hearts in the end. However, I adore the sweet, summery flavor of artichokes so frozen artichoke hearts to the rescue!
To make this dish you’ll need:
- 1 bag/12 oz frozen artichoke hearts (mine were from Trader Joe’s)
- 1 tbsp chopped pancetta
- 1/4 cup panko crumbs
- 1/3 cup grated cheese (parmesan or romano works well)
- 3 cloves of garlic, roughly chopped (I also added about a tbsp of garlic flowers)
- the juice of one lemon
- a pinch of herbed sea salt
- olive oil
1. Preheat oven to 365F. In a large, shallow oven-proof dish (a pyrex works well here) combine pancetta, artichokes, and garlic.
2. Season with salt, olive oil and lemon juice, add grated cheese and toss lightly.
3. Sprinkle panko breadcrumbs 0n top and bake for about 30-35 minutes until golden and lightly crunchy.
Lemony, summery, and delicious!
