You can never have too many meatballs, I don’t think. And one of my favorite things to be able to do in the morning is to reach into the fridge and stealthily grab a cold meatball to have with a piece of toast before breakfast.
These turkey meatballs are perfectly seasoned and equally great hot or cold:
- 1 lb turkey mince/ground turkey
- 1 small onion, finely chopped
- 1 elephant garlic clove, minced
- 1/3 cup parsley, finely chopped
- 5 t (+ 3 T for topping) tomato paste
- 1 egg
- 2 T (+ 2 T for topping) olive oil
- 1/3 cup (+ 2 T for topping) bread crumbs
- salt, pepper
1. Preheat oven to 400F. Using your hands, mix the mince, onion, garlic, egg, bread crumbs, tomato paste, and olive oil. Add in parsley and season with salt and pepper.
2. Form meatballs – personally, I like them a little larger than a golf ball – and fit them together snugly in a large, shallow baking dish. You should have about 18, give or take.
3. Mix together the remaining tomato paste, olive oil, and crumbs and spoon and spread the mixture on top of each meatball.
4. Bake for 30-35 minutes until lightly crispy on top.
These sound perfect for breakfast indeed!
