Don’t let the list of these unusual ingredient put you off from making this delicious winter salad! Try it, I’m sure it is going to be a surprising hit at your dinner table. Completely and totally inspired by Russian holiday salads.
You’ll need:
- 2 large beets
- 1/2 cup toasted walnuts
- 1/2 cup soaked prunes
- 5-6 cloves garlic
1. Start with the beets because they will take the longest – boil them in salted water for up to 2hrs until soft. Place into ice water immediately after taking beets off the stove – this will make peeling them so much easier.
2. While the beets are cooking, soak the prunes in hot water.
3. When you’re ready to put the salad together, mince the garlic, cut up the nuts roughly, and chop the prunes finely. Peel and grate the beets and mix well.
4. Dress with olive oil lightly and taste for salt – I would add a couple pinches.
