Perhaps we should start a new ‘Simple is good’ category! I am all for that.
Here is a light, refreshing fruit salad to enjoy throughout the summer.
Note: for the fullest flavor, allow honey 24hrs to infuse.
You will need:
- 3 oz blueberries
- 10 oz fresh peaches – peeled and sliced
- 2 tablespoons honey
- 1 tablespoon hot water
- 5-7 sprigs of fresh thyme
1. Infuse the honey first: as I said above, it’s best to allow this 24 hours – mix together honey and hot water in a small bowl. Add in chopped thyme and some full thyme sprigs – use them to mix everything together and leave to infuse.
2. Combine sliced peaches and blueberries. Add honey and a few of the thyme leaves, about a teaspoon, mix well.
Mmm smells like summer.
