Even simple weekend snacks can be sumptuous. Moreover, I actually insist that they should be.
When you’re stuck in the house on a rainy day like today, here is a great little snack that you can enjoy while watching the Olympics, playing scrabble, reading or updating your food blog :).
You will need:
- 4 large tortillas (we used wheat but they can be whole wheat if you prefer)
- 2 Granny Smith Apples
- 1 wedge of good quality young Brie cheese
- Pouring honey (will make it easier)
- Balsamic vinegar
1. Prepare by slicing the apples and brie – don’t slice them too thin, about the size you would have on a cheese&fruit platter.
2. Heat up a large round nonstick pan.
3. Heat up one tortilla on the bottom of the pan.
4. In radiating circles, layer the apples and cheese on the tortilla.
5. Sprinkle generously with vinegar and honey.
6. Cover with second tortilla on top.
7. Let it crisp up for 4-5 minutes then flip. It’s ready as soon as the cheese has gotten gooey (though not totally melted and sticky).
8. Slice like a pizza 🙂 and enjoy!

This recipe can also be translated into a tasty cold sandwich, using a baguette instead of a tortilla.
