So instead of making the cardamom rice pilaf, I cheated a little and made it a lemon and cardamom rice pudding.
Why? Only because I love a good rice pudding and the strong flavor profile of this recipe makes it a fresh option for summer. It’s creamy and packs a punch of flavor.
You’ll need:
- 8 green cardamom pods
- 5 cups low fat milk
- 1 cup white basmati rice
- zest of one lemon
- 5 tbsps sugar
1. Shell the cardamom pods – use only the beans inside. Mix cardamom, rice, and milk in a medium saucepan.
2. Bring rice mixture to a boil, stirring often. Reduce heat and cook for another 15-20 minutes until mixture has thickened and the milk has reduced by about 1/3 to 1/2. Add the lemon zest. Continue to stir!
3. Take off heat, mix in sugar and taste. Adjust seasonings as needed and return to heat for a minute to melt the sugar.
4. Transfer to a bowl or another heatproof container and chill.
I can’t wait to make the cardamom rice pilaf either :).
