Some days you need comfort and comforting, and while those are not always the same thing, this soup, as you cook and eat it, somehow manages to provide both.
The flavors of carrot and ginger both soothe and invigorate. After a bowlful, you’ll be back and ready to tackle the rest of whatever the afternoon holds.
Carrot and ginger soup
You’ll need:
- 1 stalk celery, chopped
- 1 onion, diced
- 7 medium-sized carrots, chopped (carrots come in all shapes and sizes, so adjust the amount, accordingly)
- 1 1/2 cloves garlic, chopped
- 2 T curry powder
- 1/3 t cinnamon
- 3 quarts veggie stock
- 1 can coconut milk
- 1/2 t freshly ground ginger
- 1/8 cup brown sugar
- salt, pepper
- canola oil
- fresh tarragon (optional)
1. Saute the celery, onion, and carrots in a pan with a little canola oil until the carrots lose some of that crunch.
Toast spices with curry powder, then add them and the garlic to the vegetables (with a bit more oil) and cook until fragrant.
2. Transfer the vegetable mixture to your soup pot. Add vegetable stock and fresh ginger, bring to a steady simmer.
3. Slowly add in sugar and coconut milk, stir well to combine and bring back up to a light simmer. Take off heat, let cool slightly, and puree in a blender [or with an immersion blender].
4. Season with salt and pepper, to taste, and garnish lightly with tarragon.
