Been a little bit under the weather this week, following a terrific trip to Toronto over the weekend. With things just starting to rev up again, I am trying to ease into catching up on everything.
This cauliflower recipe is simple, delicious, and takes no time at all.
Everyone loves cauliflower cheese, but this is such a fresh, lighter alternative, I have no doubt it will become a new staple for you as well.
Cauliflower quiche
You’ll need:
- 1 head cauliflower
- 2 eggs
- 1 large Spanish onion, chopped
- 3 cloves garlic, minced
- 1/2 grated or crumbled mild goat or sheep’s milk cheese
- 4-5 sweet medium-sized tomatoes (like Campari)
- 1/2 t herbes de provence
- olive oil
- salt, pepper
1. Trim and break up the cauliflower. Bring a pot of water to a boil, cover with colander, and steam cauliflower for about 10 minutes until just tender. Preheat oven to 350F.
2. Prepare a 9 inch round or square baking dish, then butter or oil it. Combine the cauliflower florets, onions, garlic, most of the cheese (retain about a handful for topping), and the two eggs in a bowl. Season to taste, with herbes de provence and a good pinch of salt and pepper, and arrange in the baking dish.
3. Cut tomatoes in half and arrange on top of cauliflower mixture. Top with remaining cheese and light drizzle of olive oil.
4. Bake for about 25-30 minutes until golden brown. Serve immediately.
