Another great way to enjoy the creamy deliciousness of avocados this month – in a cheese-filled omelet!
You’ll need:
- 1/2 avocado, diced
- 2 eggs
- 1/4 cup kefir
- 1/4 cup grated cheese (Asiago or Jack is best)
- pimento, to taste
- a handful of chopped parsley
- salt & pepper & olive oil
1. Heat up a skillet with a little olive oil on medium-high heat. In a large bowl, whisk together eggs, kefir (it acts almost like buttermilk in pancakes, making the omelet nice and airy), salt, pepper, and pimento.
2. Add the cheese to the egg mixture and pour into the skillet. Cook just until set and lightly browned on the bottom, then add avocado and fold over.
3. Cook a little longer to get a little crisp (if you like that), flip, and sprinkle with parsley. Eat while it’s warm and gooey.
