Merry Christmas, everyone! As much as any big holiday, this is an occasion to come together, eat together, be thankful for most of the past year, and look forward to the coming one.
This year, I was looking for a special menu that was not too crazy and time-consuming (or messy!) and for dishes that could come to the table fresh and warm, all at the same time.
While I was getting things ready in the kitchen, people could snack on little crispy sweet potato fries with a yogurt-parsley dip.
For dinner we had two appetizer courses – grilled halloumi & nectarine salad (with lemon juice and basil) and little pumpkin-gorgonzola flans.
For main course, I made bouillabaisse with two different kinds of fish as well as prawns. Adding fennel to the traditional base gave it an even more south-of-France flavor.
It was lovely and warming and we polished off the leftovers today.
We received a lovely goodie bag of homemade sweets from my neighbors so to finish off the meal, I decided to make a ‘lighter’ dessert of bittersweet chocolate mousse, which we garnished with some raspberries (surprisingly good for this time of the season!).
Altogether, it was warm, indulgent, and comforting – all things I look for in a holiday meal!
