Much belated post, but perhaps a timely reminder and motivator in January when I will be eating lots of multigrains, fresh fruit, and vegetables, of what has been a great holiday eating season.
So, something to remember – our very international Christmas weekend:
Fennel, cilantro, olive, and chickpea salad is an old favorite – recipe here.
Pumpkin/potimarron roasted with rosemary, sage, clementine leaves, and a little bit of red pepper flakes – delicious.
