Wrapping up peach month with a couple more recipes – keep voting in the poll for August’s prime ingredient! So far, zucchinis are in the lead.
I’ve had to get creative with herbal teas, both because of the hot weather and because I’ve had to curb my caffeine consumption in recent months. This iced tea mix is like a non-alcoholic, refreshing Pimms. Nothing needs to be peeled – you want that added flavor.
You’ll need:
- 1 lemon, sliced
- 1 kirby cucumber, sliced
- 1 peach (with pit), sliced
- 1 bushel fresh mint, picked
1. Place 1 liter (about 4.5 cups) of cold water, lightly crushed mint, sliced peach, sliced cucumber, and lemon in a large pitcher.
2. Leave to infuse overnight (in the fridge). I don’t think it needs sugar but, by all means, add some in, if you’d like.

I’d like to have a go at making this but am rather confused about the ingredients. Wikipedia tells me that a Kirby is a picking type cucumber so I guess I can substitute about 3inches/15cm of ordinary cucumber. However I never weigh in bushels and I have no idea what the weight of the mint might be in UK imperial or metric. I’ve tried conversion charts and am just confused as it seems rather a lot!
I suppose it is ‘to taste’ and I could try adding 2 or 3 sprigs from my windowsill plant? I have just made some mint lemonade using 2 sprigs and 2 lemons to a litre of water but this peach version sounds lovely.

Hi! I’m glad you are having a got at the mint tea – let’s see if this helps: Kirbys are the little cucumbers, like that ones that you may grow in your garden or hothouse. They are usually a little more prickly and uneven and, I think, more flavorful than the regular ones, but you can by all means use half of a regular cucumber here.
In terms of bushels – imagine if you went to the market and got a bunch of mint or dill or parsley. I’m sure they vary country to country and if I remember correctly, in the UK they were rather smaller than here :). So I would say definitely more than 1 or 2 sprigs or mint – closer to 5 or 6. It’s minty!
