S&h-ers know how much I love quiche. And a quick, crustless quiche with two of my favorite ingredients was a no-brainer for brunch today.
Both asparagus and ramps pack a punch of springtime flavor.
You’ll need:
- 1 bunch ramps, trimmed
- 1 lb of asparagus, trimmed
- 2 egg white
- 1/2 cup skim milk
- 1 cup shredded sharp cheddar
- 1 shallots, finely chopped
- 2 garlic cloves, minced
- olive oil
- salt, pepper
- a little bit of chili flakes (omit, if you don’t like spice)
1. Preheat oven to 375F. Saute shallots and garlic. Lightly grill asparagus.
2. Mix together eggs, milk, half of the cheese. Add seasonings.
3. Chop the ramps roughly, keeping the leaves separate.
4. In a tart pan, layer shallots, garlic, and chopped ramps. Cover with egg mixture. Top with asparagus, ramp leaves, and remaining cheese. Give it another sprinkle of salt and pepper.
5. Bake for 25-30 minutes. Wait a little before cutting and serve immediately.
One of my favorite dishes… quiche! And this looks incredible. Although we don’t have ramps here 🙁 But I’m sure a leek or spring onions would do. Love this recipes. Fantastic as always!
