There are many things my grandma taught me, but one of them is: never let dough go to waste, not in this house!
I don’t want to say we invented this (but maybe we did), but it’s a pretty great idea nonetheless.
Dates-in-a-blanket (copyrighted, just in case)
You’ll need:
- leftover puff pastry (store-bought is totally fine)
- medjool dates
- nuts (pistachio, pine, pecan, any)
- baking chocolate (over 50% cocoa butter)
- 1 egg (for egg wash)
Take the pits out of the dates and replace them with a piece of chocolate and several nuts. Take small square piece of rolled out puff pastry and wrap it around the date (pig-in-a-blanket style). Place in paper muffin or cupcake cups.
Brush with egg wash and bake at 175 C for 10-15 minutes until puffy and golden.
Let cool slightly and enjoy! (also quite enjoyable when not warm) Gooey chocolate deliciousness.
