A tartine is a bit of a fancy name for an open-face sandwich, but what I really love about tartines is that they allow to get as creative as you’d like.
This one is simple, yet surprising. I love the crunch of the breakfast radishes paired against the seasoned yogurt – wakes you right up! This would be perfect as an easy breakfast or an afternoon snack.
French breakfast radish tartine
You’ll need:
(serves 2)
- 4 slices of nutty whole-grain bread (I used Bread Alone Nine Mixed Grain)
- 4 T thick greek yogurt
- 1 large bunch radishes (about 15-20 radishes, depending on size)
- 1 t fleur de sel
- 1 t pink peppercorns (crush them lightly with your fingers.
1. Toast bread – I like to toast it twice so that you have a sturdy, crisp top for the tartine. Wash the radishes thoroughly and trim the ‘tails.’
2. Slice radishes lengthwise in half and then in half again. You will end up with thin slices perfect for layering.
3. Using the back of a spoon, spread one tablespoon of yogurt onto each slice of bread. Top with radish slices, sprinkle with fleur de sel (or another finishing salt of your choice) and some crushed pink peppercorns.

I simply love yogurt as a spread, with a teeny sprinkle of dukah and olive oil it’s an ultimate breakfast for me. I love the idea of crunchy crusty bread and those radishes. Great flavour combo and simple but tasty!

Oh wow, this looks so nice.. I like how some dishes have fancy names, but are simple to make 🙂 I wouldn’t have thought of making a savoury sort of toast like this, but I’m always open to trying new things 🙂
