This is such a delicious, rustic plate of food – how can you go wrong with these classic ingredients? – that I had a hard time categorizing it as one certain ‘meal.’ (I’ll admit, I had it for breakfast today).
You’ll need:
- 1/2 cup baby spinach
- 2 ripe and sweet Roma tomatoes
- 1 tsp young olive oil (it’s very fragrant and almost green in color)
- 2 generous slices homemade mozzarella (which we made this weekend)
- 1 whole wheat flatbread
1. Toast the flatbread either in the toaster oven or in a regular oven just so it is lightly crispy.
2. Cut the mozzarella and slice the tomatoes in half.
3. Sprinkle a tiny bit of the olive oil on the flatbread and then layer the spinach on top (the oil lets it ‘stick’ a little better). Place the tomatoes and mozzarella on top and dress with remaining olive oil.
4. Cut into pieces or just pick up and take a BIG bite.
