Here is another recipe from the food archives of the Ministry of Food for Eggless, fatless walnut cake:
You’ll need:
- 4 cups of flour
- 1 cup of chopped walnuts
- 1 cup milk
- 1 cup sugar
- 4 tsps baking powder (that seems to be a lot but I guess there are no eggs in this…)
- pinch of salt
1. Mix flour, sugar and walnuts together. Add salt and baking powder, then the milk. It should be slightly wetter than on ordinary cake mixture.
2. Leave to rise for 10 minutes. Bake in a greased cake tin in a slow oven (I would take this to mean not a very hot oven? 150C?) until risen and brown.
I’m kind of oddly curious to try this one now. It comes from ‘What did you do in the war, mum?’.
