This is a bit of a cheat on this month of pear, which is coming to an end (yes, the April poll will be up on Sunday or Monday!).
But if you feel like having some fun and being creative, this is a delicious idea inspired by a recipe from the Cheesemonger’s Cookbook. If you accompany this with some firm ‘real’ pears on a cheese platter, that would also be fantastic.
You’ll need:
- 1 pack (approx 10 oz) mild goat cheese (I used a very plain but creamy Chavrie)
- 1/2 cup salted, shelled pistachios
- 2 T balsamic glaze
- dried herbs (optional)
- rosemary, bay leaf, for decoration
1. Let the goat cheese come to almost room temperature and place it between two sheets of plastic wrap. Knead lightly, add herbs (if using), balsamic glaze, and mold into a pear shape – pears are not perfect, so this doesn’t have to be either!
2. Roughly chop the pistachios. Roll the goat cheese pear in the nuts, wrap back up tightly in a couple layers of plastic wrap and refrigerate for 4-6 hours.
3. Decorate with rosemary or other herbs and drizzle lightly with balsamic or honey before serving. Needless to say, you can get as creative with this as you like!
