Made by Valerie last night, on what was a quintessential early fall evening, here is a refreshing summer cocktail to see off those last warm sunny days (and nights).
Goldrush cocktails
(serves 4)
You’ll need:
- 5-6 T dark honey
- juice of 4 lemons
- 1 cup bourbon (Kentucky Buffalo Trace, in our case)
- about 3 T mint, picked
- ice
1. In a small bowl – or Pyrex measuring cup – strain most of the lemon juice (reserve a couple of tablespoons) and combine with honey. Heat in the microwave lightly to help the honey dissolve, then taste for tartness.
I prefer cocktails on the tarter side, but adjust the sweetness to taste.
2. Lightly crush and muddle the mint in each glass or tumbler.
3. Add plenty of ice and about 2 oz of bourbon to each glass before topping with lemon and honey mixture. Stir to combine.

You’d love it! It’s a good late summer into fall drink. And if there is no longer fresh mint, rosemary will do the trick too.
