I’ll be the first to admit it – I miss summer! I don’t think that going to Australia did me any favors in that sense either.
Bring the outdoors inside this winter – or if you’re in warmer climates, get that grill – and enjoy these feta and beef burgers.

You’ll need:
- 1 lb best-quality beef mince
- 1 t Worcestershire sauce
- 2 T flat-leaf parsley, chopped
- 1/3 cup feta, roughly chopped into cubes
- half a clove of garlic, minced
- salt, pepper
- olive oil
For the pickled relish:
- 2 T green Greek olives, pitted and roughly chopped
- 1 T chopped fresh mint
- 1 clove garlic, minced
- 3 small cooked beets, cubed
- 1 T red wine vinegar
- pinch of salt
1. Combine all of the relish ingredients in a small bowl and set aside.
2. In a large bowl, combine the minced beef with the seasonings, herbs, and cheese. Mix well – use your hands! And shape into large patties.
3. Preheat your grill pan with some olive oil to medium-high heat. Depending on the thickness of your patties, grill them for anywhere between 4 to 6 minutes on each side.
4. Top with relish and serve immediately, with a salad or on a seeded bun. I made a side of kale and baby brussels sprouts.

Thank you – I’ve been on a real brussels sprouts kick recently! Never used to like them much until about 5-6 months ago.
My immediate thoughts go to the packed lunches I brought to school throughout elementary school – whole-wheat bread with liver patee (very common bread spread in Norway) covered in small pieces of beetroot. Always put together by my mom. The dish thus looks very intriguing, and I’m curious to whether it would evoke the same memories, or, sort of, bring the meal to another level….Interesting! 🙂

And feta is great on top of a lamb burger, but I find it’s also a great, sturdy cheese to add to regular burgers or even turkey burgers etc.
