Happy long weekend to those in the US!
Something different to grill this weekend – or later in the summer – endive with some preserved lemons and a cooling za’taar yogurt sauce.
It will keep you refreshed in this hot weather.
Note: This is, obviously, an easy recipe to double/triple/feed a larger group of people – just keep the za’taar to yogurt proportions and then the lemon (since it’s pretty salty) proportions as they are below.
You’ll need:
- 3 Belgian endive
- olive oil
- salt, pepper
- balsamic vinegar
- 1 T preserved lemons, finely chopped
- 1/2 cup plain greek yogurt
- 1/2 tsp za’taar
1. Slice the endive lengthwise. Toss in a little bit of olive oil, just enough to create a good surface for the rest of the seasonings.
2. Season lightly with salt and pepper, top with chopped preserved lemons.
3. Heat up grill (or grill pan with a little bit of olive oil). Grill the endive, about 3-4 minutes on each side. Splash with a little bit of balsamic (a light hand!) when you flip the endive.
4. Combine yogurt and za’taar, scoop over the grilled endive.

Witlof is a new discovery in this household and I love that you’ve paired it with another love of mine, zataar! It looks beautifully caramelised and very silky with the sauce, did I say healthy too!!!

Thank you! Za’taar is also a favorite of mine. Quite healthy! Yet satisfying – that’s why I love greens and leafy vegetables!

I’m not sure there is just one recipe for the mix, I would imagine a lot of people do it a bit differently, but generally, it contains sumac, thyme, marjoram, oregano, mint, sesame seeds etc.
