This salad is easy, delicious and surprising. It’ll taste even better in the summer when the nectarines are juicier and you can fire up the grill so, tuck this one away for future reference! In the meantime, it’s warming and refreshing on your winter table.
You’ll need:
- 6 nectarines
- a block of halloumi cheese (if you can’t find halloumi, use hard feta)
- 2 tbsps olive oil
- juice of half a lemon
- half a cup chopped fresh, green basil
1. Heat up a tablespoon of olive oil in a non-stick skillet to medium-high heat. Slice the nectarines in half, removing the pit, and grill cut-side down for 5-10 minutes, turning halfway through. (Note: make sure you get grillmarks and that the nectarines skins start to brown a little like baked apples)
2. Slice the cheese into 1/2-inch thick rectangles and place on the skillet next to the nectarines. Cook about 2 minutes on each side.
3. Mix nectarines and cheese in a large bowl. Dress with a little bit of olive oil, lemon juice and chopped basil. Even people who don’t like ‘salads’ will enjoy this!
