There is a great discussion over at the Kitchn today about the best way to store a cut avocado – I usually leave on the skin, brush it with some lemon juice, and then put it in a sandwich/ziploc bag. I do tend to use them within the next day or two so I can’t say that storing (rather than just eating them!) avocados is a very prevalent concern in my house.
Some people have noted that leaving the pit in and dipping the avocado in water (I guess this forms a protective ‘film’ of some kind when it reacts with the fatty molecules in the avocado) also helps. What do you think?
ps. Sorry for being a bit absent – life has been busy on all fronts and I was in Boston over the weekend for our college reunion, but I’ll be back later this week with a tangy avocado-potato salad for your next barbecue, a great yogurt parfait recipe, and, of course, many things rhubarb, which is now in season.

Great topic. But who has leftover avocado?:) Good to see you back.

Thanks! And seriously, I don’t usually have any leftovers :).

Great tip! I usually hate to leave unused avocado in the fridge, so I always make sure I use the entire thing. =D

That is more than often the case here as well :).
