How lucky are those with a mango tree (like my neighbors)? But there can be such a thing as TOO many mangoes, especially during high mango season in summertime. Mango bread is a wonderful and popular way to use those ripe, sweet mangoes here in Hawai’i. It’s kind of like making banana bread or zucchini bread whenever you have those two in excess!
I developed this recipe as part of the summer fruit campaign for Foodland.
What really brings this recipe home is the glaze – don’t skip it. You mix some local honey with fresh lime juice and lime zest, heat it all up gently and pour generously over the top of your mango bread. If you’re being really indulgent, you can dip slices into the glaze pooling on the plate – that’s maybe my favorite part. Oh, and also the part when this smells so amazing while baking.
This is just lovely fresh out of the oven and will keep several days covered – just toast up the slices lightly as a way to reheat them.
- 0.5 cup salted butter (melted)
- 0.75 cup sugar
- 2 eggs
- 0.5 cup buttermilk
- 1 teaspoon vanilla extract
- 1.75 cups AP flour
- 0.5 teaspoon salt
- 0.5 teaspoon baking powder
- 0.15 (one eighth) teaspoon baking soda
- 2 large mangoes, chopped
- 3-4 tablespoons of Hawaiian honey
- Zest and juice of one lime
- Preheat oven to 350F and lightly oil a standard loaf pan.
- In a large mixing bowl, combine all of the liquid ingredients.
- Slowly add in the flour, but don't overmix. Fold in the rest of the dry ingredients and, lastly, the chopped mangoes.
- Pour batter into the pan and even out the top with a spatula, if necessary.
- Bake for 45 minutes to 1 hour, until a toothpick inserted into the middle of the loaf comes out clean and dry.
- Cool the bread. To make the glaze, combine honey, lime juice and lime zest in a microwave safe bowl. Heat in the microwave for 20 seconds and pour over the mango bread.
- Combine and microwave for 20 seconds then pour over the bread.
