I adore cooking but I am really a baker at heart. Fall makes me jump up and down at the excitement of all the PIES! I just couldn’t wait to get my hands on some quinces, pears, figs and a nice variety of local apples.
This week for French Fridays with Dorie (FFwD), we made apple cake, using a variety of different apples. It’s an un-intimidating recipe to try out even if you’re not a big baker.
May be a ‘European’ thing but I think I was much more used to this kind of texture in an apple cake than a lot of FFwD participants, because it is pretty similar to something my mom used to make quite a lot when I was growing up in Russia and I’m quite happy with more apples in proportion to dough. In any case, this proved to be a crowd pleaser for sure!
I substituted amaretto for rum because I think it always goes beautifully with apples.
And the scent! The smell of this cake baking was just coziness personified.
