Wild arugula is probably the most expensive item I buy at the greenmarket these days (thankfully, seasonal stone fruit and berries are plentiful and less expensive these days!), but there is really no substitute for its peppery crispness.
There are a lot of bold flavors in this salad but they all mingle together in a tangle of smooth summer tastes.
Tips: Wash your greens really thoroughly, especially if you’re using wild or freshly picked ones. I put mine in a huge bowl or even a big piece of tupperware so you can really see everything as you rinse away.
Melon, arugula, and gorgonzola salad
You’ll need:
- 2 1/2 cups wild arugula
- 1 cup sweet cantaloupe, cubed
- 1.5-2 oz gorgonzola (I used a goat’s milk variety, but use whatever you like best)
- 10-15 leaves of fresh mint
- olive oil
- 2 T apple cider vinegar
- salt, pepper
1. Wash and dry the arugula well. Cube the melon.
2. Shave the gorgonzola into thin slices.
3. In a bowl, combine arugula with mint, ripping the mint leaves in half with your hands. Add melon and gorgonzola.
4. Dress with a smooth olive oil, a bit of apple cider vinegar and a pinch of salt and fresh black pepper.
