. . . and by disturbing I also mean interesting/educational. We are doing a food safety certification course in school and it’s a bit of an eye-opener to say the least! Don’t read if you are overly squeamish.
1. Foods most likely to become unsafe include baked potatoes, tofu, sliced melons and untreated garlic-and-oil mixtures
2. You can get amnesia from severe domoic acid poisoning (found in fish and not destroyed by cooking or freezing).
3. I already knew about the rhubarb leaves, but other potentially toxic foods include undercooked kidney beans.
4. People sometimes store food next to chemical containers.
5. There is a particular order to storing food in the fridge and if you store poultry on the top shelf, everything underneath that is a goner.
6. Food workers are not allowed to eat or even drink (for the most part, except out of sippy cups) in the kitchen and prep areas.
7. Simple acts such as rubbing your ear can contaminate food.
8. You don’t need to wear gloves when you’re butchering meat (if it will be cooked later).
9. For the department of health, two people sick = an outbreak.
10. Fountain soda is one of the grossest things ever. The sugar that collects in the bar pumps attracts roaches etc.
Also, have you read this article about shiitake mushrooms?

UNDERCOOKED KIDNEY BEANS? the kitchen is lurking with dangers… and in #5.. is that uncooked poultry or cooked? Good thing I hate the taste of fountain soda. :-/

That’s uncooked poultry but it can also only be kept at a certain temp/for certain time once it is cooked!
