To conclude walnut month: Banana-blueberry-walnut bread.
I wanted to come up with the easiest tasty recipe, and I think this is the one!
One banana, one bowl (one egg, one cup of flour… you get the idea) – here is your easiest and yummiest banana bread yet.
You’ll need:
- 1/4 stick (2 tablespoons) butter, softened
- 1 egg
- 1 large banana
- 1/2 cup plain nonfat yogurt (drained)
- 1/4 cup brown sugar
- 3 tbsp honey
- 1 cup all-purpose unbleached flour
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1/8 teaspoon baking powder
- 1/4 teaspoon cinnamon
- 1/4 cup walnuts
- 1/4 cup dried blueberries
1. Preheat oven to 350F. In a large bowl, cut up the banana and use a fork or a wooden spoon to mash the banana and combine with sugar, butter, honey, egg, and yogurt.
2. Add the dry ingredients – flour, cinnamon, baking powder, baking soda, – and your add-ins (walnuts, blueberries or you can substitute other berries) and fold in until moistened.
Blueberries will look like chocolate chips 🙂
3. Layer in a standard loaf pan and bake for about an hour until golden-brown. A knife inserted into the middle of your banana bread should come out clean. Let cool before cutting as this will be pretty moist and airy right out of the oven because of the yogurt.
