I’m off for a little bit for some family time and plan to gather more inspiration for my menu! I thought I would share this recipe for Eggs Lorraine (like quiche Lorraine without the pastry) I found on a carton of eggs last time I was in France.
You’ll need:
- 12 thin slices of bacon
- 20 g butter
- 12 thin slices of gruyere
- 8 eggs
- 2 tablespoons of sour cream
- salt & pepper
1. Put the slices of bacon in a hot non-stick pan and cook until translucent.
2. Butter four large ramekins and place the bacon and a slice of gruyere on the bottom of each.
3. Break 2 eggs into each dish, spoon a bit of creme fraiche around the yolks, sprinkle with salt and pepper.
4. Bake the eggs at 350F for about 20-25 minutes until eggs are lightly set. *Au miroir means that you cook the white of the egg to look as smooth as a mirror. The yolk is lightly set and a little runny.
