An easy salad for when you need reminding of the taste of summer. Or if you’re in London today, of the fact that summer actually happened.
You’ll need:
- 1 mango
- 1 papaya
- 1 lime’s worth of lime juice
- 1 red chili pepper
- mint leaves (about a small handful)
1. Peel and dice the mango and papaya into even cubes.
2. Chop the chili and the mint leaves finely.
3. Combine all ingredients (mix gently! particularly if the fruit is further on the ripe side) and dress with lime juice.
Great on its own or as a tart but sweet sidedish.
