A green, smooth and warming vegetable soup, just what the doctor ordered for this chilly weather. It will cheer your lunch right up!
You’ll need:
- 2 cups peas (fresh or frozen, I used fresh)
- 1 cup raw baby spinach
- a handful of almonds
- 1/3 cup parsley, picked and chopped
- 2 1/2 cups chicken stock
- 1 Spanish onion, diced
- 3 cloves garlic, minced
- 1 1/2 tablespoons olive oil
- salt, pepper – to taste (I like a lot of pepper in mine!)
- creme fraiche or yogurt to serve (optional)
1. In a medium-sized pot, saute the onions and garlic in olive oil until translucent and golden.
2. Add stock and season with plenty of salt and pepper. Bring to a boil.
3. Add peas and spinach and bring back up to a boil and let simmer for a few minutes. Skim, if necessary.
4. Pour into a blender, add parsley and almonds, and pulse until smooth – I prefer it to retain a bit of texture but do it to your preference.
5. Reheat and serve with a little bit of creme fraiche or yogurt, stirred through or right on top.

I made it pretty thick but it was so refreshing, it would make a great winter or summer soup.

Hm, we made pea and mint soup, which was really good. This looks a little chunkier, but quite similar. I might give this a chance 🙂
