Some last additions to peach month – an addictive sweet and savory peach and avocado salsa, served with some roasted sockeye salmon.
The tastes of the end of summer, so rich in flavor and color.
Note: If you make the chili oil in advance, that will really punch up the flavor of your salsa! Serve it with fish or with some tortilla or blue corn chips.
Peach and avocado salsa
You’ll need:
- juice of half a lemon
- 1 1/2 T chopped fresh mint
- 1 rippe haas Avocado
- 1 peach
- 1 ripe but firm tomato
- 2 T chili oil (olive oil + red chili flakes)
- a pinch of salt
1. First, make the chili oil – it’s best if you do it a couple of hours in advance at least (a day or more is even better). In a small bowl, combine 5-6 T olive oil with 1/2 t of red chili flakes and let infuse.
2. Remove the skin from the peach (you can score the peach lightly and blanch it quickly to make removing the skin easier) and dice. Dice the tomato and avocado, as well, and mix well to combine.
3. Dress the salsa with lemon juice and chili oil, and mix in the chopped mint right before serving.
