Fresh, simple, delicious – kicking off peach month is this peach and arugula salad, with almonds and a cumin-yogurt dressing.
You’ll need:
- 3 cups wild arugula (can also through in some mesclun if you want)
- 1 oz unsalted whole almonds
- 1 ripe peach
- 3 tablespoons plain yogurt
- 1 tablespoon extra virgin olive oil
- 1 tablespoon cumin
- 1 tsp lemon juice
- 1 tsp balsamic vinegar
- salt, pepper
1. Mix the arugula with a little mesclun (both from Satur Farms – love their greens!) and slice the peach into 1/4 inch slices.
2. Season with pepper, add almonds and set aside while you’re making the dressing.
3. For the dressing, whisk together yogurt, cumin, and olive oil. Slowly add in the vinegar and then the lemon juice. Taste and season with salt according to taste; you may also want to add some more olive oil or lemon juice depending on the consistency of the yogurt you are using.
4. Dress the salad, mix well, and enjoy!
