I had poached some peaches, in a simple syrup with St Germain, earlier this week, so peach melba for breakfast was a quick treat, so colorful and delicious.
I had canned the peaches that I did not use right away, but I am afraid that this is the last of the jars already. Lesson learned: make more next time!
I used greek yogurt – and greek yogurt ice cream would be gorgeous with this as well – raspberry jam, the lovely syrup that I had canned the peaches in, and lots of slivered almonds.

Your poached peaches sound wonderful. I can understand why you’re out of them already! I also like your breakfast version with Greek yogurt – sounds like a decadent way to start the day.

I used Greek yoghurt instead of cream too and it was delicious. I need to work on having this for breakfast soon!

I had this for dessert, but then also had it for breakfast the morning, similar to you with Greek yogurt and raspberry jam. I’m out of peaches, but hoping I can poach a few more for more delicious breakfasts (or desserts).
I need to get to canning/jarring as many peaches as I can in these last few weeks – need to make some time for that :).
