While in the car earlier this week, I wondered: what if you were to make a peanut butter and apple pie? Two things I like to eat together. And that’s it, that is how this recipe was born.
There are more apples than peanut butter, but I prefer more fruit than anything else in pies and other fruit desserts. The peanut butter layer is crunchy and sweet with a texture reminiscent of dulce de leche or boiled condensed milk (a childhood treat back in the day).
I think it’s a sumptuous fall treat, perfect with tea or a glass of milk.
You’ll need:
- pate brisee
- 2 tart apples (bramley or granny smith, peeled and sliced into 1/3 inch pieces)
- 2 T honey
- 1/2 cup crunchy peanut butter (I used PB&Co, my neighbors in Soho)
- 2 T unsalted butter
- pinch of salt
- 1/4 cup milk
- 1 T cornstarch
- 1 1/2 T light brown sugar
- for the glaze: 3 T lemon juice + 2 T honey + 1 T hot water
1. Preheat oven to 375F. Roll and drape pate brisee in a cake pan (I used a springform but it doesn’t have to be). Crimp the edges.
2. Toss the peeled and sliced apples with the cornstarch.
3. In a small saucepan over low heat, melt peanut butter, salt, butter, and honey. Stir until well mixed and melted together.
4. Take peanut butter mixture off of heat and slowly mix in the milk. Pour into the pie shell.
5. Fan out the apple slices on top of the peanut butter. Sprinkle with light brown sugar. Bake for 30-35 minutes.
6. Prepare the glaze. Once the pie has cooled for a minute or two, use a pastry brush to glaze the apples with the honey-lemon mixture. It gives them a sheen and a lovely burst of flavor. Cool the pie in the fridge for about an hour (or more) before eating.

Very easy to make, as it turns out. Also want to experiment with a peanut butter crumb on top of an apple coffee cake type thing.
